  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 cups chicken broth
  • 2 cups chopped escarole or spinach
  • 1/2 cup small pasta (like acini di pepe)
  • 1 tbsp olive oil
  • 1/4 cup chopped parsley

Instructions

  1. Mix beef, pork, breadcrumbs, Parmesan, egg, garlic, salt, and pepper in a bowl.
  2. Shape into small meatballs (about 1 inch).
  3. Heat olive oil in a large pot over medium heat.
  4. Brown meatballs in batches, then set aside.
  5. Add chicken broth to the pot and bring to a boil.
  6. Stir in pasta and cook for 5 minutes.
  7. Add greens and meatballs, simmer for 10 minutes.
  8. Garnish with parsley before serving.
