- 1 lb Italian sausage (beef or turkey)
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 2 cups fresh spinach, chopped
- 1/4 cup chopped fresh parsley
- Heat olive oil in a large pot over medium heat.
- Add Italian sausage and cook until browned, breaking it into crumbles.
- Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
- Pour in chicken broth, white beans, diced tomatoes, oregano, basil, and black pepper. Stir well.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add spinach and parsley. Cook until spinach wilts, about 2 minutes.
- Serve hot.
Notes
- For extra flavor, use fire-roasted diced tomatoes.
- If the soup is too thick, add more broth or water.
- Garnish with grated cheese if desired.
