A hearty and flavorful soup featuring Italian sausage and cheese-filled tortellini, perfect for a comforting meal.

Ingredients

  • 1 lb Italian sausage (beef or turkey)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 9 oz cheese-filled tortellini
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Grated Parmesan for serving

Instructions

  1. Brown the sausage in a large pot over medium heat. Drain excess fat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in diced tomatoes, chicken broth, basil, oregano, and red pepper flakes. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Add tortellini and cook according to package instructions.
  6. Stir in spinach until wilted. Season with salt and pepper.
  7. Serve hot with grated Parmesan.

Notes

  • Use fresh tortellini for best texture.
  • Adjust spice level by adding more or less red pepper flakes.
