Tender beef tips cooked in a rich gravy using the Instant Pot for a quick and flavorful meal.

Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil.
  2. Add beef tips and brown on all sides. Remove and set aside.
  3. Sauté onion and garlic until softened.
  4. Return beef to the pot. Add beef broth, Worcestershire sauce, salt, pepper, and thyme.
  5. Close the lid and set to high pressure for 20 minutes. Allow natural release for 10 minutes.
  6. Mix cornstarch and water to make a slurry. Stir into the pot to thicken the gravy.
  7. Serve warm over mashed potatoes or rice.

Notes

  • Cut beef into even pieces for uniform cooking.
  • Adjust salt and pepper to taste.
  • Store leftovers in an airtight container for up to 3 days.
