- 1.5 lbs beef stew meat, cubed
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 2 tbsp cornstarch
- 2 tbsp cold water
- Set the Instant Pot to sauté mode and heat olive oil.
- Add beef tips and brown on all sides. Remove and set aside.
- Sauté onion and garlic until softened.
- Return beef to the pot. Add beef broth, Worcestershire sauce, salt, pepper, and thyme.
- Close the lid and set to high pressure for 20 minutes. Allow natural release for 10 minutes.
- Mix cornstarch and water to make a slurry. Stir into the pot to thicken the gravy.
- Serve warm over mashed potatoes or rice.
Notes
- Cut beef into even pieces for uniform cooking.
- Adjust salt and pepper to taste.
- Store leftovers in an airtight container for up to 3 days.
