- 2 tbsp butter
- 2 large leeks, cleaned and sliced
- 4 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup milk
- Salt and pepper to taste
- 1 tbsp fresh thyme
- Melt butter in a large pot over medium heat.
- Add sliced leeks and sauté until soft, about 5 minutes.
- Stir in diced potatoes and cook for another 3 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer until potatoes are tender (15-20 minutes).
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in milk, salt, pepper, and fresh thyme.
- Simmer for another 5 minutes before serving.
