A creamy and comforting potato leek soup that’s easy to make and perfect for any season.

Ingredients

  • 2 tbsp butter
  • 2 large leeks, cleaned and sliced
  • 4 medium potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup milk
  • Salt and pepper to taste
  • 1 tbsp fresh thyme

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add sliced leeks and sauté until soft, about 5 minutes.
  3. Stir in diced potatoes and cook for another 3 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer until potatoes are tender (15-20 minutes).
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Stir in milk, salt, pepper, and fresh thyme.
  8. Simmer for another 5 minutes before serving.

Notes

  • Use an immersion blender for easier cleanup.
  • Garnish with fresh herbs or a drizzle of cream if desired.
  • Store leftovers in the fridge for up to 3 days.
