A simple and flavorful appetizer featuring roasted sweet potato rounds topped with creamy feta and a drizzle of honey.

Ingredients

  • 2 medium sweet potatoes, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato rounds with olive oil, salt, and pepper.
  3. Arrange in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  5. Remove from oven and let cool slightly.
  6. Top each round with crumbled feta, a drizzle of honey, and thyme.
  7. Serve warm.

Notes

  • For crispier rounds, broil for 1-2 minutes after roasting.
