- 2 medium sweet potatoes, sliced into 1/2-inch rounds
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 2 tbsp honey
- 1 tsp fresh thyme leaves
