A hearty and easy-to-make hobo casserole with ground beef, potatoes, and vegetables.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup carrots, sliced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. Brown ground beef in a skillet over medium heat. Drain excess fat.
  3. Layer potatoes, onions, bell pepper, and carrots in a greased baking dish.
  4. Spread cooked ground beef evenly over vegetables.
  5. Mix condensed soup, milk, salt, black pepper, and garlic powder in a bowl. Pour over beef and vegetables.
  6. Cover with foil and bake for 1 hour.
  7. Remove foil, sprinkle cheese on top, and bake uncovered for 10 minutes.
  8. Serve hot.

Notes

  • You can substitute ground turkey for ground beef.
  • Add other vegetables like zucchini or peas if desired.
  • Store leftovers in an airtight container for up to 3 days.
