A hearty and nutritious high-protein white bean soup that’s easy to make and packed with flavor.

Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, garlic, carrots, and celery. Cook until softened.
  4. Stir in the white beans, vegetable broth, thyme, salt, pepper, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.
  6. Remove the bay leaf before serving.

Notes

  • For extra creaminess, blend half the soup before serving.
  • Add a splash of lemon juice for a fresh twist.
  • Store leftovers in the fridge for up to 3 days.
