- 2 cups dried white beans, soaked overnight
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- Drain and rinse the soaked white beans.
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until softened.
- Stir in the white beans, vegetable broth, thyme, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.
- Remove the bay leaf before serving.
Notes
- For extra creaminess, blend half the soup before serving.
- Add a splash of lemon juice for a fresh twist.
