- 1 lb ground turkey or chicken
- 4 large bell peppers, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup cooked quinoa or rice
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- Brown the ground turkey or chicken in a large pot over medium heat.
- Add onion, garlic, and bell peppers. Sauté for 5 minutes.
- Stir in diced tomatoes, chicken broth, quinoa or rice, paprika, and cumin.
