Ingredients

  • 1 lb ground turkey or chicken
  • 4 large bell peppers, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup cooked quinoa or rice
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground turkey or chicken in a large pot over medium heat.
  2. Add onion, garlic, and bell peppers. Sauté for 5 minutes.
  3. Stir in diced tomatoes, chicken broth, quinoa or rice, paprika, and cumin.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Season with salt and pepper before serving.
