1 lb ground beef (or turkey)
1 onion, diced
3 cloves garlic, minced
1 bell pepper, diced
1 can (14 oz) diced tomatoes
1 can (6 oz) tomato paste
4 cups beef or vegetable broth
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
8 oz lasagna noodles, broken into pieces
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Fresh basil for garnish
Instructions
In a large pot, brown the ground beef over medium heat until fully cooked.
Add onion, garlic, and bell pepper. Cook until softened.
Stir in diced tomatoes, tomato paste, broth, Italian seasoning, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 10 minutes.
Add broken lasagna noodles and cook until tender, about 10-12 minutes.
In a small bowl, mix ricotta, Parmesan, and half the mozzarella cheese.
Serve soup hot, topped with a dollop of the cheese mixture and extra mozzarella. Garnish with fresh basil.
Notes
Use ground turkey or chicken for a leaner option.
For extra protein, add cooked lentils or quinoa.
