A rich and creamy taco soup packed with protein for a satisfying meal.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, cooking until softened.
  3. Add ground beef and cook until browned.
  4. Stir in taco seasoning, salt, and black pepper.
  5. Pour in chicken broth and bring to a simmer.
  6. Add black beans, corn, and diced tomatoes.
  7. Simmer for 15 minutes.
  8. Stir in heavy cream, cheddar cheese, and sour cream.
  9. Cook for another 5 minutes until heated through.
  10. Serve hot with your favorite toppings.

  • Use Greek yogurt instead of sour cream for extra protein.
