Ingredients

  • 2 cups rolled oats (gluten-free)
  • 1 ripe banana (mashed)
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup dark chocolate chips (vegan)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. In a bowl, mix mashed banana, almond butter, maple syrup, almond milk, and vanilla extract.
  3. Add oats, cinnamon, and salt. Stir until well combined.
  4. Fold in chocolate chips.
  5. Press the mixture into the baking dish evenly.
  6. Bake for 20-25 minutes until edges are golden.
  7. Let cool before slicing into bars.

Notes

  • Store in an airtight container for up to 5 days.
  • For extra crunch, add chopped nuts.
  • Substitute peanut butter if almond butter isn’t available.
