1 cup whole wheat flour
1/2 cup protein powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup Greek yogurt
1/4 cup honey
1 egg
1 tsp vanilla extract
1 cup fresh blueberries
Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with liners.
In a bowl, mix flour, protein powder, baking powder, baking soda, and salt.
In another bowl, whisk Greek yogurt, honey, egg, and vanilla extract.
Combine wet and dry ingredients, then fold in blueberries.
Divide batter evenly into muffin cups.
Bake for 20-25 minutes or until a toothpick comes out clean.
Cool before serving.
Notes
Store in an airtight container for up to 3 days.
Substitute honey with maple syrup if preferred.
Frozen blueberries can be used if fresh ones are unavailable.
