A simple and nutritious detox soup packed with vegetables to cleanse and energize your body.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 zucchini, diced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1 cup chopped kale
  • 1 lemon, juiced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
  3. Stir in zucchini and cook for another 3 minutes.
  4. Pour in vegetable broth and diced tomatoes.
  5. Add turmeric, cumin, and black pepper. Simmer for 15 minutes.
  6. Add kale and cook for 3 more minutes.
  7. Turn off heat and stir in lemon juice before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Adjust spices to taste.
  • Add cooked quinoa or lentils for extra protein.
