- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 zucchini, diced
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp black pepper
- 1 cup chopped kale
- 1 lemon, juiced
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
- Stir in zucchini and cook for another 3 minutes.
- Pour in vegetable broth and diced tomatoes.
- Add turmeric, cumin, and black pepper. Simmer for 15 minutes.
- Add kale and cook for 3 more minutes.
- Turn off heat and stir in lemon juice before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Adjust spices to taste.
- Add cooked quinoa or lentils for extra protein.
