A hearty and healthy twist on the classic chicken pot pie, transformed into a delicious soup.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup milk or unsweetened almond milk
  • 1 cup frozen peas
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Pour in chicken broth and bring to a simmer.
  5. Stir in shredded chicken, peas, thyme, and rosemary.
  6. Simmer for 10-15 minutes.
  7. Add milk and stir well. For a thicker soup, mix cornstarch with a little water and stir into the soup.
  8. Season with salt and pepper.
  9. Serve hot.

Notes

  • Use rotisserie chicken for quick prep.
  • Add diced potatoes for extra heartiness.
  • Freeze leftovers for up to 3 months.
