Easy and healthy banana oatmeal muffins made with simple ingredients. Perfect for breakfast or a quick snack.

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1 egg
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (180°C). Line a muffin tin with paper liners.
  2. In a bowl, mix mashed bananas, oats, almond milk, egg, honey, and vanilla.
  3. Add baking powder, cinnamon, and salt. Stir until combined.
  4. Divide batter into muffin cups, filling each 3/4 full.
  5. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes before serving.

Notes
