A simple and flavorful one-pan meal featuring tender chicken and tropical flavors.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix soy sauce, honey, olive oil, garlic powder, and ginger powder.
  3. Place chicken breasts on a sheet pan and coat with half the sauce.
  4. Arrange pineapple, bell peppers, and onion around the chicken.
  5. Drizzle remaining sauce over vegetables.
  6. Bake for 25-30 minutes until chicken reaches 165°F (74°C).
  7. Garnish with fresh cilantro before serving.

Notes

  • For crispier vegetables, broil for 2-3 minutes at the end.
  • Replace honey with maple syrup for a vegan option.
  • Serve over rice or quinoa for a complete meal.
