- 1 lb ground beef
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can (28 oz) diced tomatoes
- 4 cups beef broth
- 1 cup green beans, chopped
- 1 cup corn kernels
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Heat olive oil in a large pot over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
- Stir in diced tomatoes, beef broth, green beans, corn, oregano, basil, and black pepper.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
