A hearty and flavorful beef stew made with Guinness stout, perfect for a comforting meal.

Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 cups Guinness stout
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the beef cubes on all sides, then remove and set aside.
  2. In the same pot, sauté the onion, carrots, and celery until softened.
  3. Add the garlic and tomato paste, cooking for another minute.
  4. Return the beef to the pot. Pour in the Guinness and beef broth.
  5. Add the bay leaves, thyme, and rosemary. Season with salt and pepper.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the beef is tender.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

  • You can substitute other stouts if Guinness is not available.
  • For a thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew during the last 10 minutes of cooking.
