This Ground Turkey Sweet Potato Skillet is a quick and healthy one-pan meal. It is perfect for a weeknight dinner and packed with flavor.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • Salt and black pepper to taste
  • 1/2 cup chicken broth
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  2. Add chopped onion and minced garlic to the skillet. Cook until the onion softens, about 3-5 minutes.
  3. Stir in diced sweet potatoes and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until vegetables start to soften.
  4. Add chili powder, cumin, paprika, salt, and black pepper. Stir to combine and cook for 1 minute until fragrant.
  5. Pour in chicken broth. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, or until sweet potatoes are tender.
  6. Remove the lid and cook for another 2-3 minutes to allow any remaining liquid to evaporate.
  7. Garnish with fresh cilantro before serving.

Notes

  • For extra spice, add a pinch of cayenne pepper with the other spices.
  • You can substitute other vegetables like zucchini or spinach.
  • Serve with a side of rice or a green salad.
