- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- Salt and black pepper to taste
- 1/2 cup chicken broth
- Fresh cilantro, chopped, for garnish
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion and minced garlic to the skillet. Cook until the onion softens, about 3-5 minutes.
- Stir in diced sweet potatoes and red bell pepper. Cook for 5-7 minutes, stirring occasionally, until vegetables start to soften.
- Add chili powder, cumin, paprika, salt, and black pepper. Stir to combine and cook for 1 minute until fragrant.
- Pour in chicken broth. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes, or until sweet potatoes are tender.
- Remove the lid and cook for another 2-3 minutes to allow any remaining liquid to evaporate.
- Garnish with fresh cilantro before serving.
