  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • Cooked rice, for serving

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
  3. Add onion and garlic to the skillet and cook for 2-3 minutes until softened and fragrant.
  4. Stir in bell pepper, broccoli, and snap peas. Cook for 5-7 minutes, until vegetables are tender-crisp.
  5. In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, grated ginger, and red pepper flakes (if using).
  6. Pour the sauce over the turkey and vegetables. Stir to coat everything evenly.
  7. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
  8. Serve hot over cooked rice.
