1 pound ground turkey
1 onion, chopped
2 cloves garlic, minced

2 tablespoons curry powder
1 teaspoon cumin

1 (14.5 ounce) can diced tomatoes, undrained
1 (13.5 ounce) can coconut milk
1/2 cup chicken broth

Instructions
Heat olive oil in a large skillet or pot over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
Add chopped onion to the skillet and cook until softened, about 5 minutes.
Stir in minced garlic and grated ginger. Cook for 1 minute until fragrant.
Add curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
Pour in diced tomatoes, coconut milk, and chicken broth. Bring to a simmer.
Reduce heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld.
Season with salt and black pepper to taste.
