  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (13.5 ounce) can coconut milk
  • 1/2 cup chicken broth
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess fat.
  2. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in minced garlic and grated ginger. Cook for 1 minute until fragrant.
  4. Add curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.
  5. Pour in diced tomatoes, coconut milk, and chicken broth. Bring to a simmer.
  6. Reduce heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld.
  7. Season with salt and black pepper to taste.
  8. Garnish with fresh cilantro before serving.
