1 pound ground turkey
1/2 cup breadcrumbs
1/4 cup finely chopped fresh parsley
2 tablespoons finely chopped fresh mint
1/4 cup grated onion
1 clove garlic, minced
1 large egg, lightly beaten
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions
In a large bowl, combine the ground turkey, breadcrumbs, parsley, mint, onion, garlic, egg, oregano, salt, and pepper. Mix until just combined, being careful not to overmix.
Form the mixture into 1-inch meatballs. You should get about 20-24 meatballs.
Heat the olive oil in a large skillet over medium heat.
Add the meatballs to the skillet and cook for 8-10 minutes, turning occasionally, until browned on all sides and cooked through.
Serve hot with your favorite accompaniments.
Notes
For extra flavor, add a pinch of red pepper flakes to the mixture.
These meatballs can be made ahead of time and reheated.
