Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss chicken, potatoes, bell peppers, and onion with olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread evenly on a large sheet pan.
  4. Bake for 25 minutes.
  5. Remove from oven, flip chicken, and stir vegetables.
  6. Return to oven and bake for 15 more minutes.
  7. Sprinkle with feta cheese and olives.
  8. Drizzle with lemon juice before serving.
