Ingredients

  • 2 cups cooked chicken, shredded
  • 6 cups chicken broth
  • 1/2 cup fresh lemon juice
  • 1/2 cup uncooked orzo pasta
  • 2 eggs
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Bring chicken broth to a boil in a large pot.
  2. Add orzo and cook for 8 minutes.
  3. Reduce heat to low and stir in shredded chicken.
  4. In a bowl, whisk eggs and lemon juice together.
  5. Slowly add 1 cup of hot broth to the egg mixture while whisking.
  6. Pour the mixture back into the pot, stirring constantly.
  7. Add dill, parsley, salt, and pepper.
  8. Simmer for 5 minutes and serve warm.
