  • 4 oz goat cheese
  • 1 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Slice peppers in half lengthwise and remove seeds.
  3. Mix goat cheese with thyme, salt, and pepper.
  4. Stuff each pepper half with the cheese mixture.
  5. Drizzle with olive oil and bake for 12-15 minutes until peppers soften.
  6. Serve warm.
