- 4 boneless, skinless chicken breasts
- 4 medium potatoes, diced
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley
- Preheat oven to 400°F (200°C).
- In a bowl, toss potatoes with 1 tbsp olive oil, half the garlic, oregano, salt, and pepper.
- Spread potatoes on a baking sheet in a single layer.
- Bake for 20 minutes, flipping halfway.
- Meanwhile, coat chicken with remaining olive oil, garlic, and Parmesan.
- Add chicken to the baking sheet with potatoes.
- Bake for another 20-25 minutes until chicken is cooked through.
- Sprinkle with parsley before serving.
