  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (1.25 ounce) packet chili seasoning mix
  • 1/2 cup water
  • 1 (9.25 ounce) bag Fritos corn chips
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • Sour cream (optional, for serving)

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  2. Stir in the chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Pour in the tomato sauce, diced tomatoes, kidney beans, chili seasoning mix, and water. Bring to a simmer, then reduce heat to low, cover, and cook for at least 15 minutes, or up to 30 minutes, to allow flavors to meld. Stir occasionally.
  4. Preheat your oven to 350°F (175°C).
  5. Divide the Fritos corn chips among individual serving bowls or spread them in a 9×13 inch baking dish.
  6. Spoon the chili mixture over the Fritos.
  7. Sprinkle generously with shredded cheddar cheese.
  8. Bake for 10-15 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and fresh cilantro. Serve immediately with a dollop of sour cream, if desired.
