- 2 lbs beef short ribs
- 4 large yellow onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 1/2 cup dry red wine (optional)
- 1 tbsp flour
- 4 slices crusty bread
- 1 cup shredded Gruyère cheese
- Season short ribs with salt and pepper. Brown in olive oil over medium-high heat, then remove.
- In the same pot, melt butter and cook onions until caramelized (about 30 minutes).
- Add garlic, thyme, and flour. Cook 1 minute.
- Deglaze with red wine if using, then add broth and bay leaf.
- Return ribs to pot. Simmer covered for 3 hours until meat is tender.
- Remove ribs, shred meat, and return to soup. Discard bones.
- Toast bread slices. Ladle soup into oven-safe bowls, top with bread and cheese.
- Broil 2-3 minutes until cheese melts. Serve hot.
