  • 2 large eggs (separated)
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons granulated sugar
  • 1 tablespoon vegetable oil (for cooking)

Instructions

  1. Separate the egg whites and yolks into two bowls.
  2. Whisk the egg yolks with milk and vanilla extract until smooth.
  3. Sift the flour and baking powder into the yolk mixture and mix well.
  4. Beat the egg whites until foamy, then gradually add sugar and beat until stiff peaks form.
  5. Gently fold the egg whites into the yolk mixture in three batches.
  6. Heat a non-stick pan over low heat and lightly grease with oil.
  7. Spoon the batter into the pan, forming tall pancakes. Cover and cook for 4-5 minutes.
  8. Flip carefully and cook for another 3-4 minutes until golden brown.
  9. Serve immediately with syrup, fruit, or whipped cream.
