These falafel burgers are a delicious and healthy vegetarian option, perfect for a quick meal or a barbecue. They are crispy on the outside and tender on the inside, packed with flavor from fresh herbs and spices.

Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil, for frying
  • 4 burger buns
  • Toppings of your choice (lettuce, tomato, onion, tahini sauce)

Instructions

  1. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, lemon juice, cumin, coriander, cayenne pepper (if using), salt, and pepper. Pulse until well combined but still slightly chunky.
  2. Transfer the mixture to a bowl and stir in the flour until just combined.
  3. Divide the mixture into four equal portions and shape them into patties.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Cook the falafel patties for 4-5 minutes per side, or until golden brown and crispy.
  6. Serve the falafel burgers on buns with your favorite toppings.

Notes

  • For a gluten-free option, use gluten-free flour or chickpea flour instead of all-purpose flour.
  • You can prepare the falafel mixture ahead of time and refrigerate it for up to 24 hours.
  • These burgers can also be baked or air-fried for a healthier alternative. Bake at 375°F (190°C) for 15-20 minutes, flipping halfway. Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway.
