A simple and comforting sweet potato soup that’s easy to make and packed with flavor.

Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup coconut milk (optional, for creaminess)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
  2. Add sweet potatoes, cumin, paprika, salt, and pepper. Stir to coat the potatoes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until sweet potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
  5. Stir in coconut milk if using. Adjust seasoning if needed.
  6. Serve warm, optionally garnished with fresh herbs or a drizzle of coconut milk.

Notes

  • For extra flavor, roast the sweet potatoes before adding them to the soup.
  • If the soup is too thick, add more broth or water to reach desired consistency.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
