A simple and nutritious soup combining carrots and sweet potatoes with warm spices.

Ingredients

  • 2 cups carrots, chopped
  • 2 cups sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add carrots, sweet potatoes, cumin, ginger, and paprika. Stir to coat.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until vegetables are tender.
  6. Blend the soup until smooth using an immersion blender or regular blender.
  7. Season with salt and pepper to taste before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Garnish with fresh herbs or a dollop of yogurt if desired.
