Fresh shrimp ceviche marinated in citrus juices with crisp vegetables.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup lime juice
  • 1/2 cup lemon juice
  • 1/2 red onion, finely diced
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1 jalapeño, minced
  • 1/4 cup cilantro, chopped
  • Salt to taste

Instructions

  1. Boil shrimp for 2 minutes until pink, then chill in ice water.
  2. Dice shrimp and place in a bowl.
  3. Add lime juice, lemon juice, and let marinate for 20 minutes.
  4. Mix in onion, cucumber, tomato, jalapeño, and cilantro.
  5. Season with salt and refrigerate for 30 minutes before serving.
