A hearty and nutritious red lentil soup perfect for any meal. Simple to make and packed with flavor.

Ingredients

  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and carrot. Cook for 5 minutes.
  3. Stir in cumin and turmeric.
  4. Add lentils and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  6. Blend until smooth if desired.
  7. Stir in lemon juice, salt, and pepper.
  8. Serve warm.

Notes

  • Store leftovers in the fridge for up to 3 days.
  • Add more broth for a thinner consistency.
  • Garnish with fresh herbs if desired.
