  • 1/4 cup honey or maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup milk (dairy or plant-based)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix oats, almond flour, cinnamon, baking powder, and salt in a bowl.
  3. Add grated carrots, honey, egg, milk, and vanilla extract. Stir well.
  4. Pour batter into a greased baking pan.
  5. Bake for 25-30 minutes or until a toothpick comes out clean.
