A simple and delicious Italian bruschetta topped with fresh mozzarella, tomatoes, and basil.

Ingredients

  • 4 slices of Italian bread
  • 2 medium tomatoes, diced
  • 200g fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Place the bread slices on a baking sheet and toast for 5 minutes until lightly crisp.
  3. In a bowl, mix tomatoes, mozzarella, basil, garlic, olive oil, and balsamic vinegar.
  4. Season with salt and pepper.
  5. Spoon the mixture onto the toasted bread slices.
  6. Serve immediately.
