A simple and healthy carrot cake made without flour. This easy recipe uses oatmeal and carrots for a moist, naturally sweet dessert.

  • 2 cups rolled oats
  • 3 large carrots, grated (about 2 cups)
  • 2 eggs
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan.
  2. Blend oats in a food processor until they reach a flour-like consistency.
  3. In a large bowl, mix grated carrots, eggs, maple syrup, coconut oil, and vanilla.
  4. Add oat flour, cinnamon, baking soda, and salt. Stir until combined.
  5. Pour batter into prepared pan. Bake for 30-35 minutes until a toothpick comes out clean.
  6. Let cool before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
