A refreshing and simple cucumber Caprese salad that combines crisp cucumbers, juicy tomatoes, and fresh mozzarella with a light dressing.

Ingredients

  • 2 large cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls, drained
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Wash and slice the cucumbers and halve the cherry tomatoes.
  2. Drain the mozzarella balls and pat them dry.
  3. In a large bowl, combine cucumbers, tomatoes, mozzarella, and basil.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Sprinkle with salt and black pepper.
  6. Toss gently to coat all ingredients evenly.
  7. Serve immediately or chill for 10 minutes before serving.

  • Use ripe tomatoes for the best flavor.
