1 tablespoon olive oil
1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
4 cups vegetable broth
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
6 lasagna noodles, broken into 2-inch pieces
1 (8 ounce) package cream cheese, softened
1/2 cup heavy cream
1/2 cup grated Parmesan cheese, plus more for serving
1/4 cup chopped fresh parsley, for garnish
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
Pour in crushed tomatoes, tomato sauce, and vegetable broth. Stir in oregano, basil, and red pepper flakes (if using). Bring to a simmer.
Season with salt and black pepper to taste.
Add broken lasagna noodles to the pot. Cook until al dente, about 10-12 minutes, stirring occasionally to prevent sticking.
Reduce heat to low. Stir in softened cream cheese until fully melted and incorporated.
Stir in heavy cream and 1/2 cup Parmesan cheese until well combined and the soup is creamy.
Ladle the soup into bowls. Garnish with additional Parmesan cheese and fresh parsley before serving.
Notes
For a vegetarian version, omit the ground beef and add a can of drained lentils or your favorite plant-based ground meat alternative.
Adjust the amount of red pepper flakes to your preferred spice level.
Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
You can use fresh lasagna sheets for quicker cooking.
