A hearty and comforting soup made with ground beef, potatoes, and cheese, perfect for a quick weeknight meal.

  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add onions and garlic, cook until softened.
  3. Stir in potatoes, beef broth, salt, pepper, and paprika. Bring to a boil.
  4. Reduce heat and simmer for 15-20 minutes, until potatoes are tender.
  5. Add milk and cheese, stir until melted and well combined.
  6. Cook for an additional 5 minutes, then serve hot.

Notes

  • For a creamier texture, mash some of the potatoes before adding the cheese.
  • Top with extra cheese, green onions, or sour cream if desired.
