A rich and savory French onion soup made easily in a crockpot. Slow-cooked onions create a deep flavor, topped with melted cheese and toasted bread.

  • 4 large yellow onions, thinly sliced
  • 4 cups beef broth
  • 2 cups chicken broth
  • 1/4 cup butter
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp flour
  • 1/2 cup dry white wine (optional)
  • 6 slices French bread, toasted
  • 1 1/2 cups shredded Gruyère cheese

Instructions

  1. Melt butter in a skillet over medium heat. Add onions and cook until softened, about 10 minutes.
  2. Sprinkle sugar over onions and continue cooking until caramelized, about 20 minutes.
  3. Transfer onions to the crockpot. Add flour, salt, and black pepper. Stir well.
  4. Pour in beef broth, chicken broth, and white wine (if using). Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Preheat oven broiler. Ladle soup into oven-safe bowls.
  7. Top each bowl with a slice of toasted French bread and shredded Gruyère cheese.
  8. Broil until cheese is melted and bubbly, about 2-3 minutes. Serve hot.
