A hearty and flavorful soup made with ground beef, beans, and vegetables, slow-cooked to perfection in a crockpot.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  2. Transfer the beef to a crockpot.
  3. Add diced onion, garlic, bell pepper, beans, corn, tomatoes, and spices.
  4. Pour in beef broth and stir well.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Season with salt and pepper before serving.

Notes

  • For a spicier soup, add diced jalapeños or extra chili powder.
  • Top with shredded cheese, sour cream, or fresh cilantro before serving.
  • Store leftovers in an airtight container for up to 3 days.
