A hearty and creamy chowder made with chicken, corn, and vegetables, cooked slowly in a crockpot for rich flavor.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cups frozen corn
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add onion, celery, carrots, and corn.
  3. Pour in chicken broth and season with salt, pepper, and thyme.
  4. Cook on low for 6 hours.
  5. Remove chicken, shred it, and return to the pot.
  6. Stir in heavy cream and cook for another 30 minutes.

Notes

  • For a thicker chowder, mix 2 tbsp cornstarch with water and add before the final 30 minutes.
  • Replace heavy cream with milk for a lighter version.
