- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups peeled and diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 2 tbsp all-purpose flour
- 1 tbsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Transfer the beef to the crockpot. Add onion, garlic, chicken broth, and potatoes.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- In a small bowl, whisk together the milk and flour. Stir into the soup.
- Add cheddar cheese, Worcestershire sauce, salt, pepper, and paprika.
- Cover and cook for an additional 15-20 minutes until the cheese melts and the soup thickens.
Notes
- For a thicker soup, add an extra tablespoon of flour.
- Top with extra shredded cheese before serving.
- Store leftovers in the fridge for up to 3 days.
