Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 potato, peeled and cubed
  • 1 cup chopped broccoli
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add potato, broccoli, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  6. Stir in heavy cream and thyme. Season with salt and pepper.
  7. Blend until smooth (optional) or serve as is.
