A rich and creamy low-carb chicken casserole that’s easy to make and packed with flavor.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup chopped spinach
  • 1/4 cup diced onions
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix shredded chicken, heavy cream, cheddar cheese, Parmesan cheese, and cream cheese.
  3. Add chopped spinach, diced onions, garlic powder, thyme, salt, and pepper. Stir well.
  4. Transfer the mixture to a greased casserole dish.
  5. Bake for 25-30 minutes until bubbly and golden on top.
  6. Remove from oven and let cool slightly before serving.

Notes

  • Use rotisserie chicken for quicker prep.
  • Add a pinch of red pepper flakes for extra heat.
