  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 4 cups beef broth
  • 1 can (15 ounces) black beans, drained
  • 1 can (15 ounces) pinto beans, drained
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 package (1 ounce) taco seasoning
  • 1 package (1 ounce) ranch dressing mix
  • 1 cup heavy cream
  • 4 ounces cream cheese, cubed

Instructions

  1. Brown the ground beef with onion and garlic in a large pot.
  2. Drain any excess fat from the pot.
  3. Add the beef broth, black beans, pinto beans, corn, diced tomatoes, taco seasoning, and ranch dressing mix to the pot.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes.
  5. Stir in the heavy cream and cream cheese until the cheese melts and the soup is smooth.
  6. Serve hot.
