A comforting and creamy soup made with cheddar cheese and cauliflower, perfect for chilly days.

Ingredients

  • 1 medium cauliflower, chopped
  • 2 cups sharp cheddar cheese, shredded
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add cauliflower and vegetable broth, bring to a boil.
  4. Reduce heat, cover, and simmer for 15 minutes or until cauliflower is tender.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in heavy cream and cheddar cheese until melted.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • For a thinner soup, add more broth.
  • Garnish with extra shredded cheese or fresh herbs.
