  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and sugar.
  3. Add milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Carefully stir in the boiling water until just combined. The batter will be thin.
  5. Pour batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cakes cool in the pans for 10 minutes before inverting onto a wire rack to cool completely.
  8. Once completely cool, frost with your favorite chocolate frosting.
